Jeff Varasano's NY Pizza Recipe

Filtered water 110 330 550 65.5% 1000 KA Bread Flour or Caputo Pizzeria Flour 168 510 850 100% 1527 Kosher or Sea Salt 6 18 30 3.5% 55 Sourdough starter (poolish or biga) 15 45 60 9% 136 Instant yeast - optional 0.5 1.5 2.5 0.25% 4.5
Add 3/4 of flour and all the rest of the ingredients into a stand mixer with dough hook. Mix on lowest setting for 2 minutes. 20 minute autolyse rest. Start at lowest setting, mix for 5 minutes. Gradually add remaining flour. Mix a total of 10 minutes.
