Personally, I think we should not do the draft, and just deal the players out. Makes for more interesting trades.

Win-loss: My team plays yours. Stats (home runs, runs allowed, stolen bases, etc.) are assigned point values. Whoever has the most point at the end of the week gets a win; the other person gets a loss.
Categories: I think you guys played this way last year, right? If my team has a higher batting average, say, than yours, then I get one of x points for the week, with x being the number of categories we decide to score.

With categories, one could still stay in contention while losing a few weeks in a row. I liked scoring by categories, but I don't have strong feelings.
I liked being able to do the darft via email over four (five?) days.

Draft: the options are live drafting (which I would love to do, but I know Conor works Sundays), auto-drafting (setting a raft order, then letting the computer pick teams based on that order), or off-line drafting. 10D and tgl, how did you guys do it last year? I think I remember you talking about an email draft -- how was it set up?

We did an email draft. It was OK. It took 2+ weeks, though.
